[Car.; OED 1638 → DJE 1725 →; DAB 1879 →] n. the tender terminal bud of palm trees, eaten as a vegetable: 1835 The heart (formed by the rudiments of the foliaceous branches) of the crest of the Cocoa-nut tree is called the cabbage; which, whether used in stews or hashes, boiled by itself, or as a ragout, is generally allowed to be a very superior and excellent vegetable (Journal 14). 1942 The salad is made by using the palm cabbage, which is the soft, sweet heart of the palm, found just above the root (Nassau Tribune).
