The person that I choose to interview for the term ‘boil fish’ is my Great-grand Aunt. She is 80 years old and is from New Providence. She is familiar with the term. However, she said that Nassau grouper is the fish mainly chosen by Bahamians. The head, tail and backbone (preferably) of the Nassau grouper is boiled in water with onions and potatoes. The dish can be seasoned with salt, bird pepper and limes may be added. It may be eaten with johnny cake. My Great-grand Aunt said she has heard of cooking with salt pork but not with chili peppers.
